Banana and mango langka Jubilee by Chef Bruce Lim

Ingredients : 200gr Saba banana, 100 gr mangoes (diced), 50 gr unsalted butter, 25 gr mango langka jam, 25 gr brown sugar, 30ml of brandy. Topping : ice cream, mango and langka jam

Saute bananas in butter for 3 minutes, then add jam and mix until it dissolves. Add sugar and stir for 1 minute than add brandy to pan away from flame then place back onto stove and flame. Toss until the flame burns out then turn off heat. Once the heat is off and mangoes and toss. Place in serving dish and top with ice cream. Add a spoonful of mango langka jam.
